Cooking in my house can be interesting because my SCW is a picky eater. The plan for the new year is to have at least one day of no meat and one day of no chicken, beef or pork. Our no meat day is our tuna fish day or turkey day. We also are replacing our sweet drinks with water and or a cranberry mix of some kind.
Since the only fish I can handle is tuna, I planned a meal around it. Most people eat Salmon croquette but I decided to make a tuna version paired with rice and a salad. My SCW loves rice and salad without tomatoes so theses became our sides. I just took a chance that she would like the tuna croquette.
Ingredients needed: 2 cans of tuna in water, bread crumbs, 1 cup of green bell pepper, 1 cup of onion, 2 eggs salt and pepper to taste, 2 table spoons of olive oil
heat 2 table spoons of olive oil
Mix tuna, bell pepper, onion, bread crumbs and eggs and salt and pepper to taste in a large bowl
Make small patties of tuna and place on a cookie sheet
Place 3 or four tuna patties in skillet and cook until brown on each side
Once patties are done place on paper towel
Cook the rice of your choice and fix a salad of your choice.
This is my daughter’s favorite meal now. I make the salad with carrots and cucumbers with a light vinaigrette dressing.
