Recipe: Tuna Croquettes with Rice and Veggies

Cooking in my house can be interesting because my SCW is a picky eater. The plan for the new year is to have at least one day of no meat and one day of no chicken, beef or pork. Our no meat day is our tuna fish day or turkey day. We also are replacing our sweet drinks with water and or a cranberry mix of some kind.

Since the only fish I can handle is tuna, I planned a meal around it.  Most people eat Salmon  croquette but I decided to make a tuna version paired with rice and a salad.  My SCW loves rice and salad without tomatoes so theses became our sides.  I just took a chance that she would like the tuna croquette.

Ingredients needed: 2 cans of tuna in water, bread crumbs, 1 cup of green bell pepper, 1 cup of onion, 2 eggs salt and pepper to taste, 2 table spoons of olive oil

Cooking directions:

 heat 2 table spoons of olive oil

Mix tuna, bell pepper, onion, bread crumbs and eggs and salt and pepper to taste in a large bowl

Make small patties of tuna and place on a cookie sheet

Place 3 or four tuna patties in skillet and cook until brown on each side

Once patties are done place on paper towel

Cook the rice of your choice and fix a salad of your choice.

This is my daughter’s favorite meal now. I make the salad with carrots and cucumbers with a light vinaigrette dressing.

I believe by sharing my experiences, research and testimonies of how I cope with dealing with an ill child; I can help someone. I want to be an advocate for SCD parents who sacrifice so much and let them know that it’s okay to be perfectly imperfect.

    Salmon croquettes are my ULTIMATE favorite thing to cook with some smothered potatoes on the side and biscuits. However I don’t use bread crumbs, my grandmother and mother makes those recpe using ingredients of cornmeal and flour!! So when we make them we put the 1 can of salmon into a bowl with 1 egg, some flour & cornmeal along with onion, bell peppers and we season to taste. The juice inside the can isn’t drained either, when I don’t have any salmon on hand I will use a can of tuna or even mackerel to substitute for the salmon.
